Spanish Rice

Prep time:

1 lb of hamburg or ground chicken

1/4 cup chopped onion

1 1/2 cups of cooked rice

1 - 14 oz can of diced or peeled tomatoes

1 - 14 oz can of tomato sauce

1 tsp of celery salt

Brown meat with chopped onion, salt and pepper. Add rice, tomatoes, tomato sauce and celery salt to mixture. Place mixture in a baking dish and bake for 1 hour at 350 degrees.


Organic Hot Chocolate

Prep time:

2 1/2 cups whole organic milk

4 tablespoons organic unsweetened cocoa

2 tablespoons organic cane sugar

3 ounces chopped organic bittersweet or semisweet chocolate

1. Combine all the ingredients in a medium saucepan. Stir over low heat with a wooden spoon until the chocolate melts.

2. Increase heat and bring to a slight boil, stirring often. Remove from heat and whisk.

3. Return to heat and bring a slight boil again. Repeat heating and whisking once again.

This recipe can be made 2 hours ahead. Top with homemade organic whipped cream.


Mini Apple Pie

Prep time:

Pillsbury Refrigerator Biscuits
Apple Pie Filling
cinnamon and sugar mixture
aluminum foil
cookie sheet

Line the cookie sheet with aluminum foil. Have your child split a biscuit in half horizontally and place it on the cookie sheet. Put a spoonful of pie filling on one biscuit half. Place the other half biscuit on top. Seal the edges with a fork. Sprinkle cinnamon and sugar mixture on top. Bake according to biscuit instructions.

Easy Chicken Quesadillas

Prep time:

4 Boneless Chicken Breasts

1 can of diced tomatoes with Green Chillies

Packet of Taco Seasoning

Flour Tortillas

Taco Cheese

Put everything in Crockpot. Either set on low for 6-8 hours or high for 4 hours. Chicken is done when it falls apart or breaks into pieces easily.

Warm up tortillas in oven. Assemble quesadillas with chicken and cheese. Put back in the oven to melt cheese for a few minutes.

Serve with Sour Cream or Mexican Ranch Dip

Quick Italian Chicken & Potatoes

3 Boneless Chicken Breasts, 1/2 cup Italian Salad Dressing ( I used Kraft House Dressing), 1 tsp Italian Seasoning (or mix Basil, Oregano. Crushed Red Pepper and Garlic Powder), 1/2 cup Parmesan or Romano Cheese, 4 Potatoes, peeled and cut into cubes

Place Chicken in bottom of Crockpot. Sprinkle with half of Italian Dressing., Spices, and Cheese. Put the potatoes on top or around the chicken. Sprinkle with the rest of the dressing, spices and cheese. Cook on low for about 6 to 8 hours or until chicken and potatoes are tender.

Easy Crock Pot Chicken & Stuffing

4 boneless/skinless chicken breasts, 1 can of cream of celery soup or mushroom soup (I used celery,1/3 cup of milk,1 package seasoned stuffing mix (I used Stove Top),1 1/2 cups water, Salt & Pepper.

Place chicken in crock pot, sprinkle a little salt & pepper over chicken. Combine soup of choice and milk in a bowl. Pour soup mixture over the chicken. Combine stuffing and water in a bowl. Mix well. Spoon the stuffing mixture over the chicken and soup. Cover and cook on low for 6-8 hours.


S’Mores on a Stick

Prep time: 15 minutes

Make Anytime, No Campfire Required!

Microwave 7 oz of sweetened condensed milk in a bowl for 1 1/2 minutes. Stir in one cup of chocolate chips until smooth, stir in 1 cup of miniature marshmallows.

Spread chocolate mixture evenly by heaping tablespoonfuls onto 11 graham cracker halves. Top with remaining graham crackers halves, place on wax paper.

Microwave 7 oz of sweetened condensed milk for 1 1/2 minutes. Stir in 1/2 cup of chocolate chips, stir until smooth. Drizzle mixture over cookies and sprinkle with desired toppings. Let stand for 2 hours, then insert a wooden stick into the center of each cookie.


Happy Ice Cream Mice

Prep time:

Ingredients: 2 cups of vanilla ice cream. 6 single serving graham cracker crusts, 6 chocolate sandwich cookies (separated and cream filling removed), 12 black jelly beans, 6 red jelly beans, 1/4 tsp chocolate sprinkles.

Place 1 rounded scoop of ice cream into each crust. Freeze 10 minutes. Press 1 cookie half into each side of ice cream scoops for ears.

Decorate with black jelly beans for eyes, red jelly beans for nose and chocolate sprinkles for whiskers. Freeze 10 minutes before serving.

Triple Berry Breakfast Parfait

Prep time: 15 minutes

Ingredients: 2 cups vanilla-flavored yogurt, 1/4 tsp ground cinnamon, 1 cup sliced strawberries, 1/2 cup blueberries, 1/2 cup raspberries, 1 cup low-fat granola without raisins.

1. Combine yogurt and cinnamon in a small bowl.

2. Combine strawberries, blueberries and raspberries in medium bowl.

3. For each parfait, layer 1/4 cup fruit mixture, 2 tbsp granola and 1/4 cup yogurt mixture in parfait glass. Repeat Layers.
